"Traditional" Swahili beef pilau and coleslaw

Pilau is a favorite Kenyan meal and a common delicacy whose roots are deeply embedded in the culture of the Swahili communities. Pilau likely originated in Ancient Persia, but Kenyans, and residents of many other lands – India, Pakistan and most Middle East countries, claim that Pilau originated with them. Westerners know it as Rice Pilaf. (From edukenya.org) I had the ingredients in the house and decided to try out this slightly different recipe from how I usually cook it.

Ingredients

1 hour
4 servings
  • 1/2 kgBeef (pre-boiled)
  • 2 cupsrice
  • 4 cupswater
  • Whole Spices: cloves, black pepper, cardamon, cinnamon, cumin
  • Vegetables: 2 large onions, garlic and ginger paste 1 tbsp
  • 1/2 cupcooking oil
  • Salt to taste
  • Coleslaw
  • Quarter cabbage
  • 2big carrots
  • 1small onion
  • Halfgreen pepper
  • Mayonnaise
  • Black/White pepper
  • Salt to taste

Steps

    Take your whole spices: cloves, black pepper, cardamon, cinnamon, cumin and soak in water that slightly covers them, for at least 30min

    Put the 1/2 cup of oil in a cooking pan/sufuria and heat until hot then add your chopped onions until golden brown(this is the main step for the brown color of pilau and not pilau masala)

    Add your 1tbsp of ginger and garlic paste and stir, then cover for a about 2min

    Add the whole spices including the little water that you had soaked them in. Stir and cover for about 3min.

    Add your 1/2kg of pre-boiled beef, stir and cover for about 10minutes for the beef to absorb the spices well.

    Add your 2 cups of rice and stir

    Lastly add your 4 cups of water, stir and cover. Let it simmer on low heat for about 30min or until your rice is well cooked

    Your pilau is ready for serving

    For the coleslaw, these are the ingredients

    Chop your onion into thin slices then soak in salty water (to remove the bitter taste) as you prepare the rest of the ingredients

    Chop your green pepper

    Grate your carrots

    Add the vegetables I.e., cabbage, carrots, green pepper and onions in a bowl and mix

    Add 2-3 tbps of mayonnaise or to your liking, add a tsp of black/white pepper, add salt and mix together (if prepared early, you can put in the fridge to cool a bit before serving)

    Your meal is ready for serving. You can serve with a glass of juice/water or any drink of your choice. Enjoy
