Mincemeat and Pasta Bake with Cheese Sauce

Preheat the oven to 180°C.

Cook the pasta in boiling water with a little salt until al dente (just done). Drain and stir in a little oil so that the pasta pieces don't stick to one another.

Mincemeat: Heat the oil and sauté the onion and garlic until soft.

Add the mincemeat and sauté until the meat is just cooked.

Add the tomatoes, tomato paste, sugar, chutney, herbs, stock cube and the wine. Simmer for 15 minutes or until most of the liquid has evaporated.

Cheese Sauce: Melt the butter in a saucepan and stir in the flour. Gradually add the milk and stir over low heat until the sauce is smooth and thick. Season with salt and pepper. Stir in the cheese.

Transfer the pasta to a greased oven-proof dish, then follow with the mincemeat and top with the cheese sauce.

Grate extra cheese on top if you prefer. Bake for 25 minutes or until golden brown on top.
