Dahithara can be considered one of the forgotten recipes of Gujarat which was traditionally prepared during Diwali festival. It used to be served with shrikhand instead of puri.
This Diwali I have tried this almost lost recipe instead of making farsi puri or mathri. It came out perfect which makes me really happy. You can follow this recipe for the perfect melt in mouth dahithara during this festive season.

Ingredients

  • 3.5 cupall purpose flour
  • 1.5 tspsalt
  • 1.5 tspblack papercorns coarsely crushed
  • 3/4 cupwarm ghee
  • 1/2 cupcurd
  • Ghee or oil to fry

    First of all sieve the flour. Add salt and paper to it. Now add warm ghee to it and mix everything well.

    Now add curd to the flour and mix everything well. You do not have to make a proper dough, just bring everything together and cover and keep it for 20 to 30 minutes.

    Now take a small portion of the dough and smoothen it a bit between your palms. Now shape it with your thumb and fingers into small thick circles. Make cuts on it with the help of a knife. You will be able to get 30 medium siz dahithara from this recipe.

    Heat oil in a frying pan on medium heat. Do not make the oil very hot otherwise dahithara will not be very crispy and it will not cook properly from inside. Now add a few dahithara to the oil and leave it like that for a minute. Now turn it over and fry them on low heat until golden in colour. Keep turning in between. It takes a lot of time to fry but patience is the key to get a perfect outcome.

    Dahithara can be prepared as a Diwali snack and it can be served with tea or coffee.
