And when I'm not on a diet I love a biscuit. I only used a tsp of sugar and some sugar free syrup, but the more sugar the tastier.

Ingredients

20 minutes
10 servings
  1. 225 gself raising flour
  2. 2 tspbaking powder
  3. 2 tspbicarbonate of soda
  4. 3 tspginger
  5. 2 tspmixed spice
  6. 120 gcaster sugar. I use way less
  7. 6 tbspsyrup. Again I use way less
  8. 75 gbutter, I used 40 g margarine

Cooking Instructions

    Preheat oven 180 c line baking trays.

  2. 2

    Place the four, bicarbonate of soda, baking powder dried ginger and mixed spice in a bowl rub in cold diced butter by hand until breadcrumbs.

    Stir in caster sugar, pour in syrup and mix with a spoon.

  4. 4

    Bring the dough together with your hands until you get a ball of dough.
    Roll into walnut sized and cook.

    I also sandwich some together with a sugar free chocolate spread with melted white chocolate round the outside.
    I over melted. Don't do that ☺️.
    They still tasted great though.
