California Farm Roasted Garbanzo Hummus

Traditional campfire taste roasted hummus delicacy. Dried garbanzo beans are very economical, 1/2 pound of dry beans makes 2 pounds of hummus, and no metal cans to dispose of. This recipe makes a creamy hummus dip, mixed with toasted sesame seed cream, smoked spicy paprika powder, roasted garlic and olive oil, at a fraction of the cost of store bought hummus.

Roast the cloves of 1 large unpeeled elephant garlic in dry cast iron skillet till soft, then peel.

Soak cup of whole garbanzo beans with hulls overnight in water with Tbs apple cider vinegar till they have tripled in size, rinse, refresh water, slow boil 90 minutes till soft. Cool. Drain.

Mix sesame seed cream, beans, lemon juice, olive oil, flaked sea salt, paprika powder together in food processor, pulse till desired consistency is reached. Put in plastic tubs with lids, store in fridge. Enjoy.
