This is the sponge my mum used to make with lemon yogurt but as I didn't have that flavour yogurt I used lemon essence instead.

1 cupGreek yogurt
1 cupsunflower/olive oil
2 cupssugar
3eggs
3 cupsself-raising flour
1 tsplemon essence

Mix sugar and eggs well with electric mixer

Once mixed add flour, oil and yogurt with the lemon essence

Oil a mould or two and sprinkle a bit of flour

Fill mould/s with mix and bake in pre heated oven at 180°C for about 30-40 minutes until golden brown and baked through
