Mixed Fruit Slice

Several months ago, I bought a packet of Mixed Dried Fruit. I needed to use it and decided to make Mixed Fruit Slice. To make this type of cake, you really don’t need a recipe, do you? I just mixed cake ingredients that I wished to use, then added Milk to make the right texture. Sweet cakes tend to get brown quickly, so I baked at 160℃. It worked really well, and this is how I made it.

Ingredients

34cm x 20cm Brownie Tin
  1. 1 packet (375 g)Mixed Dried Fruit
  2. *Note: The packet that I used today contained Raisins, Sultanas, Black Currants, Mixed Peel and Glace Cherries
  3. 60 gButter
  4. 1/2 cupCaster Sugar
  5. 1Egg *can be replaced with 45ml (3 tablespoons) Milk
  6. 1 teaspoonGround Cinnamon *OR Mixed Spice
  7. 1 pinchSalt
  8. 1 cupSelf-Raising Flour
  9. 1/2 cupMilk

Steps

  1. 1

    Line a brownie tin with baking paper. Preheat oven to 160°C. *Note: Use 34cm x 20cm Brownie Tin OR similar size Square Cake Tin.

    *Note: You may wish to soak Dried Mixed Fruit in Brandy OR Rum. Place Mixed Dried Fruit in a heat-proof bowl, add 2-3 tablespoons Brandy OR Rum, mix to combine, and heat in the microwave for 1 minute to warm up, so that Dried Fruit soak up Brady OR Rum quickly and will be ready in 1 hour.

    Place Butter in a heat-proof mixing bowl and melt in the microwave. Add Sugar and mix well. Then add Egg and mix well. *Note: You don’t need to use Egg if you prefer. Just increase the amount of Milk.

  4. 4

    Add all other ingredients and mix well to combine. Spread the mixture in the prepared tin evenly and smooth the surface.

  5. 5

    Bake for 30 minutes OR until cooked through. Allow to cool in the tin. When cooled, take out and use a sharp knife to cut into 4-5cm squares.
