This is a combination of dal and vegetables which makes it rich in protein, minerals and fiber. It can be tried with bread toast during breakfast or with rice or roti for lunch. People of all ages can have it. I have tasted it at Sri Aurobindo Ashram, Puduchery.

Steps

Soak moong dal and tur dal in water for atleast 2hrs. Rinse thoroughly with water. Cook in a pressure cooker till the whistle blows once. Switch off the burner and let it cool down. Blend it in a mixer to make smooth slurry.

Cut all the vegetables into thin slices. Blanch cauliflower, spinach and green peas. Boil potato.

In a nonstick pan, add dal and vegetables except onion. Add salt and Turmeric powder. Boil for a few minutes so that the vegetables get mixed with the dal.

For tempering, take a kadhai. Switch on the burner. Add oil.
Once it becomes hot, add cumin seed, red chili and onion slices. Sauté for 2mins till the onion turns golden brown. - 5
Transfer the vegetable lentil soup to a serving bowl. Add hot oil with fried onion and chili to the lentil soup. The soup is ready to serve.
