Heat 1/2 cup oil in a skillet over medium low flame. Do not submerge the fritter in oil. This is Shallow fry. I use cast iron skillet as it retains heat and also good for health. Add the flattened fritter to the skillet. Lift with a spatula frequently So that it does not stick to the skillet. After the bottom is cooked - golden in color, turn it over. Pour a a tablespoon of oil on top of the fritter; cook for 2-3 min. Both sides should be cooked until golden brown

After frying, take the fritter out and place it on a paper towel. A paper towel will remove the oil from the top of the patties. Then transfer to a serving platter. Nutritious fritters are ready to taste, Serve with your choice of Chutney, Ketchup or Chili Sauce. Enjoy without feeling guilty as the fritters are not deep fried.

Tip: Use good flavorful healthy oil such as peanut oil. Peanut oil has high smoking point, good for frying, do not use refined oil. If kale is not available, use spinach or any other green leafy vegetable such as cabbage. Watercress strengthens bones. if not available add any other leafy vegetable such as Brahmi leaves (vallarai in Tamil) that are good for brain. Brahmi leaves is a good memory booster
