Let's use this recipe to get comfortable with the pressure cooker. Place the pork ribs, 1 onion, 9 cloves of garlic, and salt in the cooker. Cover with water, close the lid, set the valve, and turn on the heat. Once the cooker starts to whistle, cook for 40 minutes, then turn off the heat. Wait 15 minutes for it to cool down, then remove the valve.

You can now safely open the cooker. Heat a pot over medium heat, add a little oil, and once hot, brown the pork ribs on both sides. Remove the ribs from the pot and set aside.

Blend the herbs for the mole with the piece of onion, 4 cloves of garlic, and a little of the meat broth. Use the same pot where you browned the meat—the browned bits will add extra flavor to the sauce. Pour in the blended herbs to season.

Let the mixture come to a boil; you'll notice the color change. Gradually add the ground pumpkin seeds, stirring constantly. Add more broth if needed, and check if it needs more salt.

Make sure the pumpkin seeds are fully dissolved before adding the pork ribs. Add the ribs, cover them with the mole, reduce the heat, cover the pot, and cook for about 10 minutes.
