Soak the dal in 3c of water in a bowl -10 minutes. Strain; add ginger, red chilies, coriander seeds; grind it to a fine paste. You may steam cook the toor dal paste in a steamer just as you steam idlies. I cooked it in microwave for 10 minutes. Cool and with your fingers powder it

Heat oil in a pan over medium heat and saute mustard seeds, 1 minute. Stir in fennel seeds, asafetidsa, turmeric powder. Add curry leaves. fry for 2 minutes. Add the chopped gourd. Stir fry for 5 minutes. Add the cooked dal. Toss a few times. Add salt, continue cooking over medium low heat, 4 minutes. Turn off the stove. Usili is ready. Sprinkle chopped coriander leaves on top; taste.

Aromatic flavorful nutritious usili is ready to serve and share. Transfer to a serving bowl
You may serve with rice. It is delicious when mixed with rice. I sprinkled it on top of a dosa and rolled it up to taste. Tasted great
