The holiday season often brings big meals and overindulgence. That's why I want to highlight the simplest and most nutritious dish: boiled vegetables, also known as hervido or bullit. You can use any seasonal vegetables you like, such as pumpkin, cabbage, or artichokes.

The holiday season often brings big meals and overindulgence. That's why I want to highlight the simplest and most nutritious dish: boiled vegetables, also known as hervido or bullit. You can use any seasonal vegetables you like, such as pumpkin, cabbage, or artichokes.

Start by cooking the vegetables according to how long they take to soften. For the hardest one, the green beans, trim the ends, wash, and cut them into pieces. Boil them in water for 5 minutes.

While the beans are cooking, peel and slice the carrots, then add them to the pot. Let everything boil for another 5 minutes.

Peel and dice the potatoes. Add them to the pot with a generous pinch of salt, cover, and cook for another 10 minutes.

Serve hot, with or without some of the cooking broth, and drizzle with olive oil. If you like, mash the vegetables with a fork for a textured purée. Enjoy!
