Hearty Irish Beef Stew

Ingredients

Prep 15 min, Cook 2 to 2.5 hours
4 to 6 servings
  1. 1 lb (454 g)Lean beef stew meat
  2. 1Medium Onion
  3. 2Medium carrots
  4. 2 StalksCelery
  5. 3Medium potatoes
  6. 3 cups (255 g)Broccoli florets -Frozen
  7. 1 can (284 ml)No salt added Sliced Mushrooms or 8 oz (240g) Fresh mushrooms
  8. 1/2 cup (40 g)Rolled (Old-fashioned) or Quick-cooking Oats
  9. 4 cups (950 ml)Soup stock or No salt added Broth -Any kind
  10. 1/2 cups (120 ml)Red wine
  11. 1 tbsp (15 ml)Worcestershire Sauce
  12. 1 tspGround black pepper
  13. 1 tspGarlic powder or Granulated garlic
  14. 1 tbspDijon mustard
  15. 1/2 tspTarragon (dry)
  16. 2Bay leaves
  17. 1 tbsp (15 ml)Olive oil
  18. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 15 min, Cook 2 to 2.5 hours

    In a medium bowl, Rub Ground black pepper, Garlic powder and Worcestershire Sauce into stew meat. Set-aside.

    Drain and rinse canned mushrooms.

  3. 3

    Chop vegetables.

  4. 4

    Heat a large pot to Med-High temperature and add Olive oil.

  5. 5

    Fry stew meat from step 1 until surface turns white, then transfer the meat to a plate. Set-aside.

    In the same pot (do not wash), stir-fry vegetables from step 2 & 3 onion becomes slightly transparent.

    Add the meat from Step 5, and combine together.

    Add Soup stock, Red wine, Tarragon, and Oats. Stir thoroughly. Bring to boil.

    Reduce heat to Med-Low temperature, then add Bay leaves. Cover with a lid and cook until vegetables and beef are very tender, about 60-90 min. Discard the Bay leaves.

    Transfer stew to serving bowls. Add Black pepper, Garlic powder, and Worcestershire Sauce to taste.
