In a large Dutch oven or heavy pot, heat a little oil and sauté the diced onions and veal until lightly browned.

Add the flour, seasonings (salt, pepper, thyme, and veal stock), and carrots. Stir, then cover with water. Mix well, cover, and simmer on low heat for 2 hours.

In a bowl, mix the heavy cream, lemon juice, and egg yolk.

At the end of cooking, add the mushrooms and the cream mixture. Remove the lid, stir, and let the sauce thicken.

Serve with rice. Enjoy!
