Spring Onion Paratha is a healthy twist to our regular parathas and is an ideal breakfast option.and is also suitable for kid's lunch box. Mildly spiced, this is an unique Indian flatbread recipe using spring onions ( scallions).
Spring Onions are rich in healthy nutrients and are a great source of dietary fiber. So including this winter special green vegetable in any form,be it in curries or any Indian flatbread is good for health.
Spring Onion Paratha can be served in many ways as per choice.It is ideal for a tasty and healthy breakfast but can also be included in lunch or dinner with some curries.The best option is to serve it with yogurt, raita or pickles and salad and relish the flavour of spring onion.

Wash spring onions and drain water completely.Dry it with a paper towel to remove excess water.Chop off the roots and finely chop the onions as well as the leaves.Chop finely 1 green chilli.Mince garlic and grate ginger.Mix all-purpose flour with wheat flour in a bowl.Add chopped spring onions.

Add finely chopped green chillies,grated ginger and garlic,turmeric,red chilli powder,garam masala,ajwain and cumin seeds,asafoetida,1 tbsp oil and salt as per taste. Gather all ingredients and mix to combine all. Spring onion releases water,so add water accordingly. Then knead the dough.. Form into 5-6 medium sized balls from the dough.

Dust the dough ball with some flour.Gently roll to a round of about 8 inches.Brush oil and fold into a semi circle.Again brush oil and fold and roll into a triangle.

Roll into 7-8 inch triangle.Heat a non-stick pan, place the paratha on it.Roast it till light brown spots appear.Flip and roast the other side.Apply some oil or ghee on both sides and cook till golden brown.

Serve hot with mixed pickle,salad, yogurt or raita and relish a healthy and flavorful breakfast with a cup of tea, or any other meals as per choice.
