Vegetable noodles is an easy to make indo Chinese dish which serves as a quick dinner or meal option. Noodles and vegetables or meat combos are popular across the world. They have become comfort food for many.

Steps

Bring 5 cups of water to boil in a large nonstick to cook noodles. Add 1 tsp of salt and cooking oil while cooking noodles so that noodles will not get sticky. Don't make over cook as they turn mushy.

Now transfer noodles to a bowl that contains cold water then drain the water. Now transfer the noodles to a plate and add 1/2 tsp of oil to the noodles and mix well. Keep aside.

Now rinse the veggies like cabbage, carrot, onions, bell pepper, beans. Now cut all the veggies into slices.
You can add zucchini, green chillies (Optional).

Now heat a wok or pan by adding 2 tbsp oil over high flame. Now add onion slices and toss th for about a minute. If you are using green chillies then add now while tossing the onion slices. But I skipped the addition of green chillies.

When onions become soft now add all the veggies. Fry stirring often for 3-4 minutes. Don't over cook as we want veggies to be slightly crunchy but not soft.

Now add the cooked noodles and add 1 tsp of salt, 1/2 tsp black pepper powder. Mix well everything.

Now add 1and 1/2 tsp of noodles masala and now
Mix well and stir it occasionally. (This step is optional) - 8
Now pour soya sauce, vinegar and chilli garlic sauce. Mix well and adjust salt.
(You may add 1 tsp toasted sesame oil for flavour if you like, it's completely optional)
Now toss and stir fry for 3-4 minutes without burning. - 9
Turn off the heat and transfer to a serving plate and enjoy the piping hot and delicious veg noodles.
