Ingredients

45 minutes
Serves 6 servings
  • For the Chole (Chickpeas)
  • 1 1/4 cupsdried chickpeas, soaked for 8 hours (about 250 grams)
  • 4onions
  • 4green chilies
  • 4tomatoes
  • 4 tablespoonsoil
  • 1 tablespoonginger-garlic paste
  • 1 tablespoongaram masala
  • 1 tablespooncumin powder
  • 1 tablespoonchole masala (chickpea spice blend)
  • 1/2 tablespoonturmeric powder
  • 2 tablespoonscoriander powder
  • Salt to taste
  • 1 tablespoondried fenugreek leaves (kasuri methi)
  • For the Bhature
  • 1 2/3 cupsall-purpose flour (about 200 grams)
  • 1 tablespoonfruit salt (such as Eno)
  • 2 tablespoonsplain yogurt
  • Salt to taste
  • Oil as needed (for frying)

Steps

  1. 1

    First, add the soaked chickpeas to a pressure cooker with salt and water. Cook for 5 whistles, then simmer on low heat for a few minutes. Open the lid only after the steam releases completely. Blend the onions and green chilies in a mixer or food processor. Heat oil in a pan, add the onion and ginger-garlic paste, and sauté. Add all the spices, then add the tomato puree and cook until the oil separates from the masala.

    Add the boiled chickpeas and cook together. Add water as needed, cover, and simmer on low heat for 10-12 minutes. The chole are ready.

    To make the dough for bhature, mix all-purpose flour, salt, and yogurt. Dissolve the fruit salt in 1/2 cup water, then add it to the flour and knead into a dough. Cover and let it rest for 15 minutes. Divide into portions and roll out into discs.

    Heat oil in a deep pan and fry the bhature until golden and puffed.
