Ingredients

2 people
  1. cream cheese
  2. powdered sugar
  3. heavy cream
  4. speculoos or biscoff cookies
  5. butter

Cooking Instructions

    Melt butter, crush your cookies and mix it well. I used a big tablespoon of butter for 10 speculoos cookies. Press the mixture in your tray. I used a big shallow bowl. Then put in the fridge while you make the rest.

    Mix your cream cheese (I used about 200 grams) with 2 - 3 table spoons of powdered sugar. You can use more or less to your liking or depending on how much cream cheese you used.

    Mix about 50 ml (or more, again depending on how much you make) of heavy cream until almost fully fluffy. Add it to the cream cheese and mix until no lumps are left.

    Spread the mixture over the chilled cookies. Now you're ready to go. You can eat it right away, but if you want to let the cookies on the bottom soak a little, I suggest letting it chill in the fridge for 2 hours.
