Rava Tutti-fruiti Cake

In a large bowl, mix/beat the ghee and sugar well. Then add semolina, curd and mix well again.

Then add milk and vanilla essence and mix again. Cover this mixture and keep it aside for half an hour.

If baking in a pan. Then after 30 minutes, spread some salt on the bottom of the pan. Place a stand inside. Pre-heat a pan on high heat for 5 minutes.

Take the cake batter kept aside. Now sift wheat flour, baking soda, salt, baking powder into the mixture. If the mixture is too dry add 2-4 tbsp additional milk as needed and mix well again.

Add dry fruits and tuttifruti as per your taste and preference. Fold well and do not over mix. (Keep few tutti-fruiti and dry fruits aside for garnish)

Place butter paper inside greased cake tin to prevent the cake from burning. Then Brush the inside with oil. Pour the cake batter into cake tin. Garnish with some chopped nuts and tutti-frutti.

Now place the cake tin on the stand inside the preheated pan. Cover and bake on low flame for 35-40 minutes.
If baking in the oven, bake in a preheated oven at 180 C (350 F) for 30-35 minutes until browned on the sides. - 8
After 40 minutes, insert a toothpick or knife into the center of the cake, if it comes out clean, it means the cake is done. (If not done, bake for another 10 minutes)

Check the cake again. If the toothpick comes out clean, remove the cake tin and let cool for 15 minutes before de-moulding.

Remove the cake to a plate. Cut as desired.

Enjoy as a quick breakfast during winter or on special occasions like Christmas.
