Vegan recipe made for Christmas for my brother.
Steps

Sauté the onion and carrots in a large skillet with olive oil until the onion is translucent.

Slice the tofu horizontally, then cut it into triangles. Brown the tofu on each side in the skillet, then set aside.

Add the sliced mushrooms, water, bouillon cube, and bay leaves. Simmer for 5 minutes.

Ladle out some of the cooking liquid, mix it with the cornstarch until smooth, then add it back to the pan. Stir in the soy cream.

Simmer until the carrots are tender. Add the lemon juice, then season with salt and pepper to taste. Return the tofu to the pan and serve with rice.
