Koshimbir is a Maharashtrian style Salad made with vegetables by adding curd or tempering. A tempering made by crackling mustard seeds, green chili, curry leaves and asafoetida in hot oil gives a unique taste to the salad.
Very quick and easy to make, it just involves chopping or grating veggies, mixing and tempering with traditional ingredients.
Different variations in koshimbir can be made using different vegetables or combining them.

Steps

Take grated carrot and cucumber in a mixing bowl. Add small cubed tomatoes to it.

Tempering - Heat oil in a tadka pan on medium flame. Add mustard seeds, hing, and curry leaves. Let it crackle and pour it in a mixing bowl.

Add salt, lemon juice, and chopped fresh green coriander leaves. Mix everything well and keep in the refrigerator till serving.

Serve delicious, light healthy Koshimbir (Salad) as a side dish.
