Marinated Pork Loin Sandwich with Sautéed Peppers and Fried Egg

I made this sandwich using some slices of marinated pork loin, a bit of pepper, onion, and lettuce for the sautéed peppers. I also found some mojo sauce and a fried egg in the fridge.

I made this sandwich using some slices of marinated pork loin, a bit of pepper, onion, and lettuce for the sautéed peppers. I also found some mojo sauce and a fried egg in the fridge.

For the sautéed vegetables: Wash, dry, and cut the peppers into thin strips. Wash, dry, and cut the lettuce into thin strips. Peel and slice the onion into thin strips. Sauté the onion, lettuce, and peppers in a skillet for 5-6 minutes. Season with salt. Remove from heat and let cool slightly. Set aside.

Wash, dry, and slice the tomato into half-moons. Sear the pork loin slices on a griddle or skillet for 2-3 minutes per side. Place the pork on a plate.

Slice the baguette in half lengthwise. Spread the mojo sauce on the bread. Add the sautéed vegetables on top of the sauce.

Layer the tomato slices and pork loin over the vegetables. Crack the egg into a cup.

Fry the egg in a skillet. Place the egg on a plate and cut it in half. Place the egg halves on top of the pork. Cover with the other half of the bread. Cut the sandwich in half.

Place the sandwich on a plate and serve.
