Fill pot 1/4 full of water and bring to a simmer. In a metal bowl, whisk egg yolks and lemon juice. Place metal bowl into the water bath and gradually whisk in butter. Continue whisking until sauce thickens and appears pale yellow in color. Add water as needed for desired consistency. Season with salt, pepper, and cayenne. Keep warm and set aside.

Stack ham and poached egg on top of crumpet. Drizzle hollandaise sauce over top. Garnish with green onions and parmesan.
