I had been looking for candied orange slices for a while. But recently my friend Liliana found on Instagram a recipe by Anna Terés. This is exactly what I was looking for to snack, to add it to breads and pastries, or to cover with chocolate.

Cooking Instructions

Wash and dry the oranges. Slice them thinly, discarding the ends.

Pour water in a pan with a teaspoon of salt and bring to a boil. Cook the orange slices for 5 minutes and then transfer to a deep dish with cold water. Repeat this step twice with clean water.

Pour a cup of water in a pan with the sugar, stir to dissolve, bring to a boil, add oranges, and simmer for 1 hour.

Carefully lift each slice and place on a grid to air dry. Let syrup cool and store in refrigerator to sweeten desserts and drinks. Turn slices every 12 hours approximately until desired dryness is achieved.

If desired, they can be covered in chocolate. To get a chocolate coating that is free of white streaks and imperfections, you will need to temper the chocolate: melt 2/3 of the chocolate (approx at 115°F), cool it (approx to 90°F) by adding the other 1/3 of the chocolate to it.

Stir vigorously. Brush slices with chocolate on both sides and place on a parchment paper to dry (1hour). Store inside a sealed container in a cool, dry place, in the fridge, or in the freezer.

I wasn't too precise cutting up the peel, so this may not be very professional, but I had great fun making it.It's really important to remove all of the white pith from the peel, otherwise your candied peels will be bitter.
