Pour olive oil into a large pot to cover the bottom and heat it up.

Meanwhile, rinse the pork, pat it dry with paper towels, and cut it into cubes. Dredge the cubes in flour.

Add the pork cubes to the hot oil one by one and brown them on all sides. Remove them from the pot and set aside on a plate. Repeat until all the meat is browned, unless your pot is large enough to brown all the meat at once.

After removing the browned pork, add the onion to the pot and sauté until translucent.

Add the leek and carrots. Once they soften, add the celery. Return the pork to the pot and pour in the white wine to deglaze.

Add enough hot water to cover all the ingredients. Cover and simmer for 1.5 to 2 hours, depending on the meat and your desired tenderness. Season with salt and pepper (or add a vegetable or chicken bouillon cube if you like). Add the dill near the end of cooking.

When the stew is done, let it cool slightly. In a bowl, beat the egg with a fork, add the lemon juice, and gradually add spoonfuls of the hot stew liquid to the egg-lemon mixture, stirring constantly. Once the mixture is warmed, pour it back into the pot and stir to combine.

Serve and enjoy with fresh bread!
