Simple Rice Cooker Rice & Red Lentils Pilaf with Vegetable

Ingredients

Prep 15 min, Cook 30 to 50 min

  1. 3 1/3 cups (600 g)Medium grain rice (e.g. California rice & Japanese rice)
  2. 1/3 cup (64 g)Red lentils
  3. 1Medium Onion -Finely chopped
  4. 1Medium Carrot -Small diced
  5. 1/2 tspGranulated garlic or Garlic powder
  6. 1/2 tspItalian herb mix
  7. PinchSalt
  8. 2 1/4 cups (562 ml)Soup stock or No salt added broth -Any kind
  9. 1/2 tbsp (7.5 ml)Olive oil
  10. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 15 min, Cook 30 to 50 min

    Wash the rice in a large mixing bowl or the rice cooker pot directly. Lightly rinse and swirl rice, then drain the cloudy water from the rice 2 to 3 times with cold water to get rid of extra starch and any debris; the water won't have to be completely clear. Set-aside.

    Rince and drain Red Lentils.

    Chop Onion finely. Cut Carrot into small cubes.

    Transfer the rice, Lentils, Onion and Carrots to the rice cooker pot; add Garlic powder, Italian herb mix and salt.

    Pour Soup stock over the ingredeients.

    Add Olive oil and stir roughly.

    Set the pot in the cooker; close the lid and start cooking. Cooking time is 30 to 50 minutes, but it depends on your rice cooker. When the cooking process is done, let the rice sit in the cooker for about 5 minutes.

    Open the lid; turn pilaf over and fluff it up, most of times the herbs and vegetables have risen to the top.

    Serve in an individual bowl or transfer a large bowl for self-serving.

    The pilaf is excellent for making tasty Omurice (Japanese Omelette Rice). Simply place an Omelette over the pilaf, serve with ketchup and ground black pepper.
