This is a super nutritious dish. Currently in Paraguay, some public schools serve school lunch, and once a week the menu includes bean soup. It can be made with pasta, rice, meat, or simply as a basic vegetable soup.

Rinse the beans in water and soak them in a bowl of water for at least 12 hours or overnight, changing the water several times until it runs clear.

In a pot, preferably a pressure cooker (but a regular pot works too), add the soaked beans with about 8 cups water (2 liters), the diced vegetables, salt, and the bouillon cube. Cook over heat until the beans are completely tender.

Once the beans are soft, add the pasta and cook until the pasta is tender. Then add the cheese and stir until combined.

Serve hot and enjoy!
