Cut the 2.2 lbs of chicken into 10 pieces, wash thoroughly with lime juice, and set aside.

To make blending easier, roughly chop the turmeric, garlic, candlenuts, and ginger first.

Add 1 tbsp coriander to the chopped spices, then blend them with a little water. Once smooth, add the grated 3 1/2 oz galangal, salt, sugar, chicken bouillon, and mushroom broth powder, and mix well.

Add the spiced marinade to the chicken and pour in 3 1/3 cups of water (about 800 ml).

Add 1 bruised lemongrass stalk, 4 bay leaves, and 4 kaffir lime leaves to the marinated chicken. Cook until the water in the marinade reduces.

Once cooked, separate the chicken from the marinade. Fry the marinated chicken until cooked, then remove and drain.

To make the serundeng, take the sediment from the marinade and add 1/2 tbsp rice flour, then mix well. Adding rice flour helps keep the serundeng crispy longer.

Heat oil and fry the galangal serundeng until golden brown, then drain.

To serve, place the drained chicken on a plate and sprinkle the galangal serundeng over the chicken. The fried chicken with galangal serundeng is ready to enjoy.
