Ingredients

Prep 45 min, Cook 30 min
12 to 14 muffins
  1. Dry ingredients
  2. 2 cups (250 g)Unbleached All-purpose flour
  3. 1 cup (120 g)Oat flour (Recipe # 16664357)
  4. 1/2 cup (60 g)Finely chopped walnuts
  5. 1/2 tspGround cinnamon
  6. 1/2 tspBaking soda
  7. Wet ingredients
  8. 4Medium Ripe Bananas -Peeled (approx. 400g)
  9. 1/2 cup (125 ml)No sugar added Apple sauce
  10. 1/2 cup (125 ml)Vegetable oil
  11. 3 tbsp (63 g)Honey
  12. 1/2 tsp (2.5 ml)Vanilla extract
  13. Topping
  14. Rolled (Old-fashions) oats or Quick-cooking oats
  15. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 45 min, Cook 30 min

    In a medium mixing bowl, using whisk to sift all dry ingredients together. Set-aside.

    In a large mixing bowl, mash bananas with a fork; then, mix Apple sauce until a puree has formed.

    Add Vegetable oil and Honey into the fruit mixture from step 2. Mix thoroughly.

    Then, add Eggs and Vanilla extract and beat the mixture until eggs are well mixed.

    Add the dry mixture from Step 1 to the wet mixture from Step 2. Fold the mixture over until well combined. Do not knead!

    Rest the batter in the refrigerator at least 30 min in a plastic wrap covered bowl. This lets the flavours infuse and concentrate together; also, the dough consistency to be more even.

    Place a rack in middle of oven, and preheat oven to 350 ℉ (180 ℃)

    Place baking cups to a muffin tin.

    Pour the batter in baking cups about 80% to full.

    Sprinkle Oats flakes on the top of the muffins to taste. You can skip this step.

    Bake 30 min at 350 ℉ (180 ℃). Adjust bake time based on your oven.

    Cool muffins in the tin about 5 min; then, remove to wire racks and cool completely.

    Enjoy with your favourite hot drinks! Moist and satisfying without being overly sweet.

    You can store the muffins with a plastic film wrapping individually for up to 5 days in the refrigerator, and for up to 8 weeks in the freezer in a freezer bag or air-tight container.
