The secret ingredient to keeping these moist is...apple sauce!
Cooking Instructions
- 1
In a medium mixing bowl, using whisk to sift all dry ingredients together. Set-aside.
- 2
In a large mixing bowl, mash bananas with a fork; then, mix Apple sauce until a puree has formed.
- 3
Add Vegetable oil and Honey into the fruit mixture from step 2. Mix thoroughly.
- 4
Then, add Eggs and Vanilla extract and beat the mixture until eggs are well mixed.
- 5
Add the dry mixture from Step 1 to the wet mixture from Step 2. Fold the mixture over until well combined. Do not knead!
- 6
Rest the batter in the refrigerator at least 30 min in a plastic wrap covered bowl. This lets the flavours infuse and concentrate together; also, the dough consistency to be more even.
- 7
Place a rack in middle of oven, and preheat oven to 350 ℉ (180 ℃)
- 8
Place baking cups to a muffin tin.
- 9
Pour the batter in baking cups about 80% to full.
- 10
Sprinkle Oats flakes on the top of the muffins to taste. You can skip this step.
- 11
Bake 30 min at 350 ℉ (180 ℃). Adjust bake time based on your oven.
- 12
Cool muffins in the tin about 5 min; then, remove to wire racks and cool completely.
- 13
Enjoy with your favourite hot drinks! Moist and satisfying without being overly sweet.
- 14
You can store the muffins with a plastic film wrapping individually for up to 5 days in the refrigerator, and for up to 8 weeks in the freezer in a freezer bag or air-tight container.

Banana Oat Muffins Banana Oat Muffins
These came about because I had some spotty bananas on my counter and just wanted to do something different with them than my normal banana bread recipe. Since my kids are crazy about muffins for breakfast, that's what I had on my mind. You can use just 1 1/2 total cup of either flours instead of mixing both of them with flaxseed like I do. I have been researching a lot of healthier alternatives to packaged meals, and oatmeal muffins are an awesome way to go. This recipe can be modified by adding different mashed or pureed fruits, such as applesauce, pumpkin, sweet potato, and more. Just remember to reduce your water to compensate for more wet ingredients. I hope you enjoy! Heather Mackenzie Malone -

Apple and Walnut Dairy-free Muffins Apple and Walnut Dairy-free Muffins
I tried making a cake using a raw apple in the rice cooker, but it turned out too sticky, so I tried making apple muffins!Using one whole apple, I cooked out the moisture fully, so they didn't turn out sticky and they tasted delicious. For a regular cake-like muffin, reduce the amount of apple. If you add the apple raw, there will be too much moisture, and the muffins will end up being too sticky. The key is to thoroughly cook out the moisture in Step 2! Recipe by miuasagi cookpad.japan -
