Steps

Cut, clean and wash the paddy straw mushroom thoroughly. Then squeeze the excess water from mushroom. Keep aside.

Now in a kadhai add 1 tbsp of mustard oil, heat it. Add the mushroom and saute well by adding a little amount of salt and turmeric powder. Saute for 5 -10 minutes.transfer to the plate.

Now in a kadhai heat 2 tbsp of mustard oil. 1/4 tsp of panch phoran, 1 pinch of asafoetida, 1 dry red chilli, chopped garlic and chopped onion. Saute for 5 minutes. Now add ginger garlic paste. Again Saute for 3-4 minutes. Then add chopped potato,1/4 tsp turmeric powder, 1/4 tsp cumin powder,1/4 tsp kashmiri red chilli powder, Salt as per taste. Mix well and Saute for 5-10 minutes.

Now add mustard garlic paste, chopped tomato, chopped green chillies. Mix well and saute by adding little amount of water for 5-7 minutes.

After 5-7 minutes add previously sauteed mushrooms and mix well. Cook for 15 minutes over medium heat.

After 15 minutes add chopped coriander leaves. Mix well and switch off the flame. Transfer to a serving plate and serve hot
