Jodhpuri Pyaz Ki Kachori { Winter Special }

Take Maida, ajwain, salt & ghee & mix it well. Then prepare a soft dough by adding water Leave the dough to rest for 10 min
Heat a pan, add 1/2 tsp fennel, cumin, whole coriander & roast them. Once cooled, then grind it coarsely. - 2
Heat 3 tbsp oil, reduce the flame to medium & add chopped onions.
Fry the onion till it becomes light pink, then add all spices & ginger paste & fry it till spices leave a aroma.
Add gram flour and roast nicely
Add mashed potatoes, salt, sugar & garam masala & fry for 2 minutes. - 3
Switch off the gas; add coarsely grinded spices, mango powder & finely chopped coriander leaves.
Now onion stuffing is ready. Keep aside for 10 mins
Knead flour again & Take a medium size ball from flour & put stuffing In side & seal nicely like kachori
Heat oil in a kadhai & put the kachori in it ; When the kachoris crispy & golden brown; take them out & serve hot with choice of your chutney & tea
