Hongkong Chicken is a flavourful chicken recipe cooked in a hot and spicy gravy.It is a special chicken recipe using a blend of tasty ingredients like soy sauce, cornflour,rice flour,black pepper powder,red chilli paste,red chilli sauce and vinegar The crispy fried chicken is sautéed with Winter Special spring onion whites and greens and then simmered in a cornflour slurry to get a thick consistency .Roasted cashewnuts adds a nutty flavour to this dish.

Marinate chicken cubes with 1/4 th tsp salt, vinegar, black pepper powder,soy sauce and set aside for half hour.Heat oil in a pan.Mix cornflour and rice flour,a pinch of orange red food colour to the marinated chicken.Deep fry chicken in hot oil till golden and crisp.Remove excess oil and set aside.

Separate the spring onions and bulbs Slice the bulbs and chop the greens.Chop 1 small onion finely.To prepare sauce, heat 1 tbsp oil and sprinkle minced garlic and julienned ginger. Saute for 30 seconds till aromatic.Add slit green chillies and dry red chillies.Fry till crispy and set both the chillies aside.Add sliced spring onion bulbs alongwith some spring onion greens and finely chopped onion.Stir well and saute for a minute. Add red chilli paste,red chilli sauce,soya sauce and stir to mix.

Add fried chicken,salt and sugar and 1 tsp vinegar.Add rest of roughly chopped spring onion greens reserving some finely chopped spring onion for garnishing. Add fried slit green chillies, 2 to 3 tbsp chicken stock and stir to mix.Make a slurry of 1 tsp cornflour with 1 tbsp chicken stock.Add it to the chicken. Mix well and garnish with roasted cashewnuts,finely chopped spring onion greens and dry red chillies.Serve hot as a tasty appetizer or with a side of Chinese Fried Rice or Noodles.
