Steps

Wash eggplant, apply oil on it, roast direct on gas flame till turns soft and black. When cools, peel off burnt skin and mashed eggplant.

Take a kadai, add oil, fry peanuts. Now add hing snd chopped onions, cook till turns transculant.

Now add garlic and ginger chilli, saute it. Add chopped tomatoes. Cook it till turns soft.

Add green on onions, mix well. Now add all masalas. Mix well till oil releases. Add mashed baingan, mix well. Cook for few minutes to absorb flavors.

Lastly add shredded coconut, chopped coriander and lemon juice. Combine all together. Serve hot with roti, puri, paratha.. Enjoy.
