Steps

Wash peel and chop carrot, onion, tomato and capsicum in small pieces.

Blanch peas in hot water for 1 minute, Rinse in cold water and remove in a colander to remove excess water.

Chop coriander leaves, ginger and green chilli. Transfer it in a mixer. Add fresh peas and coarsely grind it on pulse mode.

In a mixing bowl add semolina, salt and chilli flakes. Pour curd and grinded peas mixture. Mix well. Make a batter of pouring consistency by adding water slowly if needed. Keep aside for 15 minutes.

Add and mix all chopped vegetables. Add 1/2 tsp eno fruit salt and mix gently in one direction.

Heat appe pan. Grease it with cooking oil. Immediately pour this mixture in appe cavities. Place the lid and cook on medium flame for 5-7 minutes. Flip the side and cook from other side also till golden brown colour. It may take 3-4 minutes.

Remove from pan and serve immediately with chutney of your choice.
