For the grilled pork: Marinate half of the ground pork and grill it in an air fryer.

For the filling: Sauté the remaining ground pork with chopped green onions and soaked, finely chopped wood ear mushrooms. Add seasonings to taste to make the filling.

For the wrappers: Soak the rice paper in a bowl of warm water with a little cooking oil until just softened. Remove, add the filling, and roll up. Steam or microwave the rolls until hot. Serve the bánh cuốn with mixed fish sauce, Vietnamese pork sausage, grilled pork, fried shallots, and cilantro.
