Cebu-Style Chicken Skewers with Vinegared Marinade

This is a great barbecue marinade that's popular in Cebu. You're supposed to use something called banana ketchup, but that's a bit difficult, so I used tomato ketchup in my own version.
If you cook it to just before burning, you'll get an authentic taste.
*I love the sour taste so I'm using a lot of vinegar. If you aren't quite as big a fan as I am, please adjust the amount of vinegar to your taste (adding bit by bit). For 3-4 servings. Recipe by Nooko

Cut the chicken into bite-sized pieces, and mince the onion and garlic. Mix together the ★ ingredients, and marinade all the ingredients together for at least 2 hours.

Remove the chicken only and pierce with damp skewers. Place on a baking pan covered in aluminium foil.

Take the ★ marinade, put it in a pot, and boil it about halfway down.

Pour the sauce from the previous step over the meat, and cook by grill, frying pan, over toaster, or a 200°C preheated oven. When necessary (like when cooking in a frying pan), occasionally turn over to allow the chicken to cook through evenly and thoroughly.

Today I used chicken breasts and liver and baked in the oven. I used long BBQ skewers.

If you have the sour and spicy vinegar they have in Cebu, you can use that. You can also use the pickled garlic and chili peppers.
