Ingredients

30 minutes
4-6 servings
  1. 1large boneless skinless chicken breast
  2. 1 bagfrozen broccoli florets
  3. 1 cancream of chicken soup
  4. 1/2 cupmayonnaise
  5. 1 tsp.lemon juice
  6. 2 tsp.curry powder, divided
  7. to tasteSalt and pepper,
  8. 1 cupshredded cheddar or Mexican blend cheese
  9. 1/2 cuppanko bread crumbs

    Preheat oven to 350°.

  2. 2

    Fill a medium sauce pan 2/3 of the way full with water. Add 1 tsp. curry powder, salt and pepper then bring to a boil. Wash chicken breast thoroughly. Cut into bite sized pieces and toss into pot. Boil, uncovered, for 15-20 minutes. Drain well. Place chicken in bottom of 8x8 inch baking dish.

    Prepare broccoli as directed on bag. (I always steam mine.) While cooking broccoli, mix cream of chicken soup, mayonnaise, lemon juice, 1 tsp. curry powder, salt and pepper in a bowl. Drain broccoli well. Place cooked broccoli on top of chicken in baking dish.

    Top broccoli with cream of chicken mixture evenly.

    Cover cream of chicken mixture with shredded cheese and top with bread crumbs.

    Bake uncovered for 30 minutes at 350°.
