Basbousa (Seven Cups Cake)

Beat the eggs with the vanilla, then gradually add the seven cups of ingredients while stirring continuously. Add the baking powder and salt, and mix until you get a batter similar to cake batter, but slightly thinner.

Grease a Pyrex baking dish with a little vegetable oil. Pour in the batter and bake in a preheated oven for about 30 minutes, or until the edges are golden brown.
Important: Remove the pan from the oven and gently cut the cake with a knife dipped in syrup. Brush the top with syrup as well, then return to the oven for another 10 minutes or until the top is golden. Remove from the oven and immediately pour warm syrup over the cake. - 3
Syrup: Mix 3 cups sugar (about 600 grams) + 2 cups water (about 480 ml) + a small squeeze of lemon juice. Optional: Add 3 whole cloves, 1 cinnamon stick, and 1 teaspoon orange blossom water.

Garnish with shredded coconut or as desired.
