Remember the big Guadalupe-Reyes marathon? That's when, in Mexico, we spend our days eating, dancing, and celebrating 🥳💃🏻—starting on the Day of the Virgin (December 12) and ending with the Rosca de Reyes (January 6)!

Well, February 2 is the grand finale. Whoever finds the baby in the Rosca becomes the godparent and, besides taking the baby to church, has to celebrate Candlemas Day with tamales!

Unfortunately, I couldn't get corn husks to make traditional tamales, but you know I love making tamal ring cake or tamal loaf 🤭 because it's an easier and delicious way to enjoy this Mexican treat 🇲🇽

Ingredients

  1. For the dough:
  2. 7 oz (200 grams)vegetable shortening, at room temperature
  3. 1 tablespoonbaking powder
  4. 1 1/8 lbs (1/2 kg)masa harina (corn flour)
  5. 3 cups(about 710 ml) chicken broth
  6. For the filling:
  7. 1 1/8 lbs (1/2 kg)chicken
  8. Bay leaves and seasonings, to taste
  9. Green salsa, to taste

Cooking Instructions

    Cook the chicken with bay leaves and your favorite seasonings. Make sure the broth is flavorful, as you'll use it for the dough. Once cooked, shred the chicken, sauté it with green salsa, and set aside.

    In a mixer, beat the vegetable shortening and baking powder with the paddle attachment until creamy.

    Add the masa harina (switch to the dough hook if you have one), pour in the chicken broth gradually, and mix until you have a smooth, lump-free dough.

    Grease your baking pans and spread the dough to cover the sides and center. Fill with the chicken mixture, then cover the top with the remaining dough. Seal with aluminum foil and cook in a water bath for 45 minutes to 1 hour (you can use a steamer pot or bake in the oven at 350°F/180°C).
