Beef tapa is one of the most popular "all-day breakfasts" in the Philippines. It is the "TAP" in "Tapsilog", which consists of TAPa (beef), SInangag (garlic fried rice) and itLOG (fried egg, which can be sunny side up, scrambled, or even salted egg).

There is no right or wrong way to make this because it really depends on how you want it. Some like it dry, so they just pan fry it. Others prefer it saucy. It can be salty, sweet, or spicy.

It is also up to you what part of beef you prefer. I love my tapa with lots and lots of fat because it is more satisfying especially when eaten with rice.

Have it with sliced tomatoes drizzled with a bit of fish sauce, or dip it in vinegar with minced garlic. Again, it's really up to you.

This is a quick version. I'll share a cured version next time.

In the meantime, I hope you enjoy this.

Ingredients

30 mins
2 people
  • 300 gBeef tenderloin with fat, sliced
  • 1 pcGarlic, minced
  • 1 pcChilli, minced (optional)
  • 2-3 tbspSoy sauce
  • 2 tspWorcestershire sauce (optional)
  • Salt and pepper to taste
  • 1-2 tbspCooking oil

Steps

  1. 1

    Put all the ingredients in a bowl and mix them all together with your hands.

  2. 2

    Cover it with a cling wrap and marinate for 30 minutes. You may also put it in the fridge overnight to seal all the flavors together.

  3. 3

    Prepare a frying pan and heat up the cooking oil. When the pan is ready, turn it to medium heat.

  4. 4

    You may squeeze the excess marinade from the meat if you prefer it dry. If you want it saucy, save the marinade for later.

  5. 5

    Pan fry the meat until cooked. Serve.

  6. 6

    If you have leftover rice, you may cook it using the same pan you used for the beef. Add a bit of cooking oil, then put some minced garlic. You may also use garlic powder for this. Season it with salt. Serve and enjoy!
