Lee's Simple Instapot Mashed Potatoes

Put steamer rack in the Instapot. Pour in 3 cups of water. Put the lid on. Pressure cook the potatoes for 15 minutes. Let natural release for another 15 minutes. When ready, open the vent and let any additional pressure release. Remove lid and place cooked potatoes in a large mixing bowl.

In a pyrex cup, put whole milk and softened butter in the microwave for 1 minute on high to warm the milk up and melt the butter. When ready, add the milk and butter, sour cream, salt, and pepper to the potatoes and mash together until desired consistency. Taste for spices and readjust as needed. Thin with extra splashes of milk if needed. Serve with additional pats of butter and garnish with fresh parsley and chives if desired. Enjoy
