I love cruciferous veggies! And roasting them has got to be the best way to cook them. Roasted Brussels sprouts attain an almost creamy texture on the inside, and a crackly, crispy exterior. I love them with a healthy dose of salt so I can pretend they’re French fries. 🤪

Preheat oven to 400°F.
Line a cooking sheet with aluminum foil. - 2
Wash the Brussels sprouts and remove any yellow or discolored leaves. Drain away the water.

Pat them dry, and trim the ends off.

Drizzle them with the olive oil and toss them so they are thoroughly coated.

Sprinkle them with kosher salt and the pepper, and then toss again.

Spread the sprouts onto the prepared pan, ensuring that they are well separated for even roasting.

Place them in the preheated oven and bake for 30 to 40 minutes. Toss or mix them around every 10 minutes to make sure that they are cooking evenly. They will end up a rich, dark brown.
Sprinkle additional salt on them, if desired. 🧂
They are best if eaten right away, but they will reheat fine as well.
