Take 1/2 cup cashews, 1/2 cup pistachios, 1/2 cup almonds, 2 tsp fennel seeds, 2 tsp melon seeds, 2 tsp poppy seeds, 1 tsp saffron strands, 1 tsp peppercorns, 1 tsp green cardamoms, 2 tsp sugar, a little amount of cinnamon stick. Dry roast everything for 2-3 minutes over low to medium flame except sugar. Let it cool completely. Now add sugar and mix well. Grind to make a fine powder. Keep it in a Air tight jar. Now Thanda powder is ready.

To make thandai, take one cup of milk and add 1 and 1/2 tsp of thandai powder. Mix well. Garnish with some chopped pistachios, saffron and rose petals Serve and enjoy.
