Rinse sabudana in water, 4-5 times, till water is clear, to wash away all the starch. Now shock it in beetroot juice and minimum water to submerge all of it for 4-5 hours or overnight.

Take shocked sabudana in a bowl add sendha namak, sugar powder, roasted crushed peanuts, mix it well keep aside.

Heat ghee in a kadai add cumin seeds, ginger, green chillies and saute few seconds then add boiled cubed potato pieces and stir fry them.

Now add sabudana mixture to the kadai and mix it well. Cover with a lid and cook for some times on low flame. Tasty Sabudana khichdi is ready to serve.

Garnish with coriander leaves and serve it hot.
