Ganache Cookie Sandwich

This is one of the cookies I made for this year's Valentine gift.
I made 1/2 of the recipe amount for the ones in the picture. I used dark chocolate for that batch. Please use your preferred chocolate. For 36 cookies (3.5 cm [1.4 in] each). Recipe by Yukiline

Cooking Instructions
- 1
Mix the butter and sugar until light and fluffy. Add the egg yolks and mix more.
- 2
Sift the "A" ingredients into the bowl and gently fold.
- 3
The dough is ready when it comes together and there is no visible flour.
- 4
Shape the dough into a long stick and wrap it with plastic wrap. Rest in the refrigerator or freezer for one hour to chill well.
- 5
I made round cookies this time, but you can make square shaped cookies or use any cookie cutter you like by rolling out the rested dough.
- 6
Cut the cookies into 5 mm slices and bake in an oven preheated to 170°C for 12 minutes. Cool when done.
- 7
Warm the "B" ingredients to melt the chocolate. Mix and make ganache. (I used a microwave.) Cool slightly.
- 8
Fill the cookies with the ganache. The ganache needs to cool down a bit to gain thickness, otherwise it will be hard to fill the cookies.
- 9
Finished. I recommend you rest the cookies in the refrigerator until the ganache settles.
- 10
The flavor will be fit for adults if you add liquor into the ganache.

Brown Butter Sandwich Cookies Brown Butter Sandwich Cookies
These cookies are eggless but taste uniquely flavorful despite the simple ingredients. All thanks to the brown butter.Brown butter is made by cooking butter until the milk solids brown, caramelize, and create a toasted nutty flavor. It is a simple step that takes no more than 10 minutes and definitely worth a try. Spoonful Passion -
*Matcha and White Chocolate Cookie Sandwiches* *Matcha and White Chocolate Cookie Sandwiches*
I thought that matcha and white chocolate must surely be perfect together. You can spread chocolate on the cookies too, but if you are giving them away as a present, having them too sticky is not good, so I put the chocolate inside like a sandwich. When the cookies bake, they turn brown rather than green, so after about 7 minutes, cover with aluminum foil. That way, they will keep their nice green colour. Use the leftover egg white in another recipe, such as Baked Meringue, or Tuiles. Recipe by Marimo1016 cookpad.japan -

French-Style Chocolate Sandwich Cookies French-Style Chocolate Sandwich Cookies
I was inspired by a French snack known as a "biscuit duchesse". The authentic recipe uses butter, powdered sugar, almond flour, and merengue. Mine is easier to make and easy on the wallet.-To avoid any separating, make sure to add the egg whites in small batches. If it still seems to separate, mix in 1 tablespoon of pancake mix (unlisted).-The batter will raise and spread when baked, so make sure to leave enough space between each portion of dough on the baking sheet. For approximately 15 french biscuits, 5 cm [2.0 in] in diameter. Recipe by Chisora cookpad.japan
