I came up with this foolproof and quick recipe for times when I want to eat something sweet.

The recipe uses rice flour, so it's fine to mix it round well If you heat it too much, it'll have the texture of a washing up sponge. The time will depend on your microwave, so adjust accordingly. For one 300 ml mug. Recipe by Otometeo

Ingredients

  1. 3 tbsp☆ Rice flour (Joshinko)
  2. 1 1/2 tbsp☆Sugar
  3. 1/3 tsp☆Baking powder
  4. 2 tbsp★Soy milk
  5. 1★Egg
  6. 3drops ★ Vanilla oil

Cooking Instructions

    Put the ingredients marked ☆ into the mug and lightly mix.

  2. 2

    Add the ingredients marked ★ and mix well. Make sure there are no pockets of flour left at the bottom of the mug.

  3. 3

    Mix well until it becomes smooth, then place the mug in the centre of the microwave plate and microwave at 600W for 1:40 minutes.

    It's done when the dough rises up out of the mug There will be a hollow at the bottom of the mug, so don't be surprised!

I honestly was really surprised at how it turned out! I am new (ish) to rice flours, and I wanted to try something new, and it was great! Turned out to be a little spongy, but tasted really good!
