Fluffy Kiwi Madeleine

Lots of kiwifruit was given to us as a gift. I was thinking about what I could make with it except for jam, and I tried adding it to madeleine. The sourness of the kiwi goes well with it.

Preparation: Chop the kiwi into pieces. Sift together the cake flour and baking powder.

Cream the butter in a bowl, add the sugar in 3 ~ 4 batches, and mix well.

Add the beaten egg, milk, and sifted dry ingredients to Step 2 in that order, and briefly mix with a spatula. When mixed, add the kiwi.

Pour the Step 3 mixture into paper cups or aluminium cups, and bake in the oven for about 20 minutes at 180℃.
