Cooking Instructions

1) In a saucepan, add the sugar, cornstarch, salt, and zest of two large lemons.

2) On medium heat, stir water into the saucepan and continue stirring the pan 15-20 minutes, or until the mixture thickens and begins to bubble.

3) Slowly spoon 5-6 Tbsp of the heated, thickened mixture in with the eggs yolks, stirring constantly so as not to cook the eggs.

4) Then stir the egg yolk mixture into the saucepan with the rest of the heated filling.

5) Stir in the lemon juice and butter and continue stirring until the butter is melted and the mixture is smooth.

6) Pour the filling into the pre-baked pie shell and set aside to cool.

PIE CRUST:

5)Make a well in the flour mixture and add the egg and milk, lightly combining until the mixture comes together. Do not knead the dough.

6)Incorporate until ingredients form a dryish dough. Work the dough as little as possible.

7)Split dough in half for 2 pie crusts. Wrap with cling film, and refrigerate for 1 hour.

8)Flour your work surface and a rolling pin and roll out the dough to a little bigger than your pie dish.

9)Lay the rolled out dough in a greased and floured pie dish. Press dough into the crevices of the dish so it doesn't sink in or collapse when cooking.

10)Cut around the edge of the pie dish and refrigerate again for 20 minutes. Egg wash the dough and fill it with your pie filling of choice!

How to make meringue

1) In a sauce pan combined 2 tablespoons of sugar, 1 tablespoon of corn starch, and 1/2 cup of water; mix well over medium heat until smooth and milky looking; set pan aside in cold water.

2) In a medium bowl add egg whites and beat until frothy; then add a pinch of salt and mix it in; then add 1/2 tsp. of vanilla and mix it in; now gradually one tablespoon at a time blend in 4 tablespoons of sugar and beat until soft to medium peaks form, about 4 to 5 minutes

3) add in the cornstarch mixture and beat for 5 to 7 minutes.

4) spread evenly over cooled lemon filling and softly chop meringue to create peaks.

5) put in a 400 degrees preheated oven and bake for 10 minutes or until desired Browning.
