Through trial and error, I was able to create the tasty macrobiotic muffin I've been craving!

If you fill small muffin cups 80% full, they will rise, split at the tops, and brown nicely. If you use large muffin cups, or soft molds, they will be shapeless and flat. Recipe by Miniature basil

Ingredients

  • 110 gramsCake flour
  • 40 gramsWhole wheat flour
  • 1/2 tspBaking soda
  • 3 gramsBaking powder
  • 1 pinchSalt
  • 40 gramsBeet sugar
  • 40 gramsCanola oil (or vegetable oil)
  • 30 gramsSoy milk
  • 130 gramsApple juice
  • 1few drops Vanilla extract
  • 1/2Apple (small, thinly sliced)
  • 20 gramsRaisins
  • 1Cinnamon powder

Steps

  1. 1

    In a heat-resistant dish covered with plastic wrap, microwave the raisins and apple slices for 3 minutes, then let rest unwrapped until the contents cool to room temperature.

    Sift together the cake flour, whole wheat flour, baking powder, baking powder, salt, and cinnamon.

  3. 3

    Blend the beet sugar, oil, soy milk, apple juice, and vanilla extract.

  4. 4

    Add the cooled apple and raisins from Step 1 to the wet ingredients from Step 3.

  5. 5

    Add the dry ingredients from Step 2 to the wet ingredients from Step 4.

  6. 6

    Pour the batter into muffin cups and bake for 20 to 25 minutes in oven preheated to 340°F/170°C.

  7. 7

    They're ready to serve!
