Ingredients

  1. 1 box12 or 14 Manicotti noodles
  2. 2large eggs
  3. 1/2 tspsalt
  4. 1/2 tspblack pepper
  5. 10 ozspinach
  6. 4 cupsmarinara sauce (I used Raos marinara)
  7. 8 ozshreddes mozzarella cheese
  8. 1 cupshredded parmesan cheese 1/2 for topping & the other 1/2 for stuffing mix
  9. 4 ozcream cheese
  10. 15 ozpart skim ricotta cheese

    Preheat oven to 350 degrees

    In a large bowl mix cheeses (only 1/2 parm cheese), chopped up spinach, eggs, salt & pepper until well blended

    Place mixed stuffing into plastic bag & cut the corner to make for piping stuffing into your manicotti noodles. Squeeze filling into each noodle & place them at the bottom of your baking dish. I used a 9x13 dish.

    Cover the pasta completely with marinara sauce. Sprinkle the other 1/2 parm cheese on top & extra mozzarella if you would like it cheesier. Cover with tin foil & place in oven for an hour.

    Remove dish from oven after the hour. Uncover & bake an additional 10 mins. Serve with garlic bread if you like & enjoy!
